Poor Man Husband Casserole

Poor Man Husband Casserole is a cozy, wallet-friendly meal that’s been a staple in many homes for generations. Made with simple ingredients like ground beef, pasta, and a creamy tomato-based sauce, it’s the kind of hearty dish that brings comfort to the dinner table without breaking the bank.

Tomato Sauce1 can (15 oz)
Diced Tomatoes (canned)1 can (15 oz)

Dried Basil1 tsp

Shredded Cheddar Cheese1 cup

👨‍🍳 Instructions:

Step 1: Cook the Pasta
Boil the elbow macaroni according to the package directions until al dente. Drain and set aside.

Step 2: Brown the Beef
In a large skillet over medium-high heat, cook the ground beef until browned and fully done. Drain off any excess grease.

Step 3: Sauté Onion & Garlic
Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion becomes soft and translucent.

Step 4: Stir in Tomato Ingredients
Pour in the tomato sauce and canned diced tomatoes (with their juices). Stir to combine.

Step 5: Add Seasoning
Mix in Worcestershire sauce, oregano, basil, and salt and pepper. Let the sauce simmer briefly so the flavors can blend.

Step 6: Preheat & Prep Dish
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Step 7: First Layer
Spread half the cooked macaroni into the bottom of the dish. Top with half of the beef mixture, then spoon on half of the sauce.

Step 8: Repeat Layers
Add the remaining macaroni, followed by the rest of the beef and the remaining tomato sauce.

Step 9: Add the Cheese
Evenly sprinkle the shredded cheddar cheese over the top of the casserole.

Step 10: Bake
Place in the oven and bake for 20–25 minutes, or until the cheese is fully melted and bubbly.

Step 11: Garnish & Serve
Remove from the oven and sprinkle chopped parsley over the top for color and freshness. Serve warm.
