Christmas Chaos Cake

Cake Ingredients:

  • All-purpose flour – 2 cups
  • Baking powder – 1½ tsp
  • Baking soda – ½ tsp
  • Salt – ½ tsp
  • Cinnamon – 1 tsp
  • Nutmeg – ½ tsp
  • Granulated sugar – 1 cup
  • Light brown sugar, packed – ½ cup
  • Unsalted butter, softened – ¾ cup
  • Eggs, room temperature – 3 large
  • Vanilla extract – 1 tsp
  • Sour cream – ½ cup
  • Buttermilk – ½ cup
  • Chopped pecans – ½ cup
  • Shredded coconut – ½ cup
  • Mini chocolate chips – ½ cup
  • Dried cranberries, chopped – ½ cup
  • Crushed candy canes (optional) – ¼ cup

Frosting Ingredients:

  • Cream cheese, softened – 8 oz
  • Unsalted butter, softened – ½ cup
  • Powdered sugar – 3 cups
  • Vanilla extract – 1 tsp
  • Heavy cream – 1–2 tbsp as needed

Optional Toppings:

  • Extra chopped pecans
  • Chocolate drizzle
  • Festive sprinkles or crushed candy canes

Instructions

1. Prep Oven & Pan: Preheat to 350°F (175°C) and grease a 9×13-inch pan (or two 9-inch rounds).

2. Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. Cream Butter & Sugars: Beat butter with granulated and brown sugar until fluffy (2–3 minutes).

4. Add Wet Ingredients: Beat in eggs one at a time, then mix in vanilla and sour cream until smooth.

5. Combine Wet & Dry: Alternate adding dry ingredients with buttermilk, mixing gently to avoid overmixing.

6. Fold in Mix-Ins: Stir in pecans, coconut, chocolate chips, cranberries, and candy canes.

7. Bake: Pour into prepared pan and bake 40–45 minutes, until a toothpick comes out clean. Cool 15 minutes, then transfer to a rack.

8. Make Frosting: Beat cream cheese and butter until creamy. Add vanilla, then gradually add powdered sugar. Stir in heavy cream until fluffy and spreadable.

9. Frost & Decorate: Spread frosting over cooled cake and top with sprinkles, drizzle, or nuts.
