The idea first came after a holiday dinner when I was left with plenty of leftover ham but very little energy to cook anything complicated. I wanted a meal that was warm, easy, and satisfying. After a little experimenting, this slow cooker casserole quickly became a staple in my home. It’s creamy, rich, and finished with a layer of melted cheddar cheese—classic comfort food at its best.

One of the best things about this recipe is how convenient it is. You can prepare the ingredients the night before, start the slow cooker in the morning, and let it do the work while you go about your day. It’s ideal for busy weeknights, cozy weekends, or potlucks when you want to bring something homemade and filling.

🥄 Instructions

1. Prepare the base
Lightly coat the slow cooker with cooking spray or oil. Add the diced potatoes, ham, and chopped onion.

2. Mix the sauce
In a separate bowl, combine the soup, sour cream, milk, garlic powder, black pepper, and paprika. Stir in the shredded cheese until the mixture is smooth.

3. Combine the ingredients
Pour the sauce over the potatoes and ham in the slow cooker. Stir gently so everything is well coated.

4. Cook the casserole
Cover and cook on low for 5–6 hours or high for 3–4 hours, until the potatoes become soft and fully cooked.

5. Add the cheesy topping
About 15 minutes before serving, sprinkle extra shredded cheese across the top. Replace the lid and allow the cheese to melt.

6. Garnish and serve
Top with chopped parsley or green onions if you like. Serve warm as a comforting main meal or a hearty side dish.
