4-Ingredient Roasted Cabbage Steaks

In the country kitchen, nothing really goes to waste—and cabbage has always been one of those humble staples that can surprise you. These roasted cabbage steaks began as a simple low-carb experiment for someone cutting back on sugar. One bite in, she pushed her plate away and said, “I didn’t expect this to beat fries.”

What comes out of the oven is something special: caramelized edges, tender centers, and smoky bacon that fills the kitchen with the smell of a slow Sunday meal. With only a handful of ingredients, ordinary cabbage turns into something crisp, savory, and deeply satisfying.

Serve them hot off the pan, sprinkled with bacon crumbles. They go well with grilled chicken, pork chops, or baked fish, and feel just as at home next to summer tomatoes as they do with winter vegetables like green beans or cauliflower mash. Even without a “main dish,” they hold their own on the plate.

Roasted Cabbage Steaks with Bacon 🥬🥓

Ingredients
Ingredient | Amount | Notes
Green cabbage | 1 medium (2–2½ lbs) | Trimmed and sliced into thick rounds
Olive oil | 4 tbsp | Plus a little for greasing the pan
Thick-cut bacon | 4 slices | Cooked until crisp
Black pepper | 1 tsp | Freshly ground

Directions

Preheat oven
Heat to 425°F (220°C). Line a baking sheet with foil and lightly coat with olive oil.

Cook the bacon
Bake bacon slices until crisp, about 10–12 minutes. Remove and set aside, leaving the drippings on the pan.

Prepare the cabbage
Remove any tough outer leaves. Trim the base so the cabbage sits steady, then slice into ¾–1 inch thick “steaks.”

Arrange on pan
Place cabbage slices in a single layer on the baking sheet, using a second tray if needed to avoid crowding.

Season and roast
Drizzle with olive oil and sprinkle generously with black pepper. Roast for 20 minutes, flip carefully, then roast another 15–20 minutes until golden and tender.

Finish with bacon
Crumble the cooked bacon over the hot cabbage steaks.

Serve
Serve immediately while hot and crisp, spooning any pan juices over the top.
