“Poor Man’s Husband” Casserole
This comforting casserole has long been a staple for budget-friendly family dinners. Built from simple pantry ingredients, it transforms ground meat, noodles, and creamy soups into a rich, hearty dish that feels warm and satisfying without being expensive or complicated. It’s an easy choice for busy nights when you still want a homemade meal on the table.
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 can (10.5 oz) condensed tomato soup
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 4 cups cooked egg noodles
- 1 cup frozen peas
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 2 tbsp melted butter
Instructions
1. Preheat the Oven
Set the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. Cook the Meat
In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain off any excess grease.
3. Add Aromatics
Stir in the chopped onion and minced garlic. Cook for 3–4 minutes, until softened and fragrant.
4. Prepare the Sauce
In a saucepan, combine the tomato soup, cream of mushroom soup, milk, Worcestershire sauce, thyme, salt, and pepper. Heat while stirring until the mixture is smooth and warmed through.
5. Assemble the Casserole
In the prepared baking dish, layer half of the noodles, half of the meat mixture, half of the peas, and half of the sauce. Repeat the layers with the remaining ingredients.
6. Add the Topping
Sprinkle shredded cheddar cheese evenly over the top. Mix the breadcrumbs with melted butter and scatter them over the cheese layer.
7. Bake
Bake for 25–30 minutes, or until the casserole is hot, bubbly, and golden on top. For extra crunch, broil briefly at the end if desired.
8. Serve
Let the casserole rest for a few minutes before serving so it sets slightly. Enjoy on its own or with a simple side salad or vegetables.
