3-Ingredient Bacon Meatball Bombs

3-Ingredient Bacon-Wrapped Meatball Bites
Whenever I need an easy appetizer that disappears fast, these bacon-wrapped meatball bites are at the top of my list. They’re incredibly simple to make but always look like you spent much more time in the kitchen. Wrapped in crispy bacon and coated with a rich barbecue glaze, they’re packed with smoky, savory flavor in every bite.
Perfect for game-day gatherings, holiday parties, or casual get-togethers, these meatball bites are low-carb friendly and require only a few ingredients. Serve them warm with extra barbecue sauce on the side, and watch them vanish from the platter.
Ingredients
| Ingredient | Amount |
|---|---|
| Frozen fully cooked beef meatballs | 1½ lbs (about 18–20 meatballs) |
| Thin-cut bacon | 1 lb (18–20 slices) |
| Sugar-free barbecue sauce | ½ cup, plus extra for dipping |
Instructions
1. Prepare the Oven
Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil for easy cleanup. If available, place a wire rack on top of the baking sheet.
2. Ready the Meatballs
If the meatballs are frozen solid, allow them to sit at room temperature for 10 to 15 minutes while the oven heats.
3. Wrap with Bacon
Lay the bacon slices on a cutting board. If necessary, cut them in half to fit. Wrap each meatball tightly with a slice of bacon and place seam-side down on the prepared baking sheet.
4. Add the Barbecue Glaze
Brush each bacon-wrapped meatball generously with barbecue sauce, ensuring the bacon is well coated.
5. Bake Until Crispy
Bake for 25 to 30 minutes, or until the bacon is crisp and deeply browned and the meatballs are heated through. If you’re not using a wire rack, carefully drain excess grease from the pan midway through cooking.
6. Optional Finishing Step
For extra color and caramelization, place the tray under the broiler for 2 to 3 minutes. Keep a close eye on them to prevent burning.
7. Cool Slightly and Serve
Let the meatballs rest for about 5 minutes before serving. Arrange on a platter or serve directly from the baking sheet with toothpicks and additional barbecue sauce for dipping.
Serving Suggestions
Pair these savory bites with fresh vegetable sticks, a crisp salad, or roasted vegetables for a complete low-carb spread. For guests who prefer heartier options, serve alongside slider buns or toasted garlic bread.
