Low Carb 3-Ingredient Pork Bites

Low-Carb 3-Ingredient Pork Bites

These crispy pork bites are a crowd-pleasing favorite that bring big flavor with minimal ingredients. Made from cubes of pork belly, they roast until the exterior becomes perfectly crisp while the inside stays juicy and tender. Whether you’re serving them as an appetizer, snack, or part of a larger meal, they’re an easy dish that’s always a hit.

Serve them fresh from the oven with toothpicks or small forks for convenient sharing. Their rich flavor pairs well with lighter sides such as coleslaw, marinated cucumbers, or a fresh garden salad. Complete the spread with crunchy vegetables, dipping sauces, mustard, or a splash of hot sauce, plus a refreshing drink on the side.

Ingredients

  • 2 pounds pork belly, skin on, cut into 1-inch cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

Step 1: Heat the Oven

Preheat the oven to 425°F (220°C). Place a durable glass baking dish inside while the oven comes to temperature.

Step 2: Prepare the Pork

Use paper towels to thoroughly dry the pork belly cubes. Removing excess moisture helps create a crispier texture during roasting.

Step 3: Season the Meat

Place the pork cubes in a bowl and toss with the kosher salt and black pepper until all pieces are evenly coated.

Step 4: Arrange in the Baking Dish

Carefully take the heated baking dish out of the oven. Arrange the pork belly cubes in a single layer with the skin facing upward, leaving a little room between pieces to encourage even browning.

Step 5: Roast Until Crispy

Bake for 25 to 30 minutes, allowing the fat to render and the pork to begin browning.

Raise the oven temperature to 450°F (230°C) and continue cooking for an additional 15 to 25 minutes, or until the skin becomes crisp and deeply golden. Turn the baking dish if necessary to ensure even cooking.

Step 6: Rest and Serve

Remove the dish from the oven and allow the pork to rest in the rendered fat for 5 to 10 minutes. Serve directly from the baking dish or transfer to a serving platter. For extra flavor, drizzle a small amount of the rendered fat over the pork before serving, if desired.
