Italian Cream Puffs Custard

These Italian cream puffs combine crisp, golden pastry with a rich and velvety custard filling. Baked puff pastry becomes light and flaky, then is filled with a smooth cream made from milk, egg yolks, and vanilla. A gentle dusting of powdered sugar on top completes the dessert, giving it the simple elegance often found in traditional Italian sweets.

They’re perfect for celebrations, gatherings, or anytime you want to serve a dessert that looks impressive but is wonderfully classic. Each bite offers the perfect contrast between buttery pastry and sweet, creamy filling.

Italian Cream Puffs

Puff Pastry

  • Puff pastry sheet, thawed – 1
  • Powdered sugar – for dusting

Custard Filling

  • Whole milk – 2 cups
  • Granulated sugar – ½ cup
  • Cornstarch – ¼ cup
  • Pinch of salt
  • Egg yolks – 4 large
  • Vanilla extract – 2 teaspoons
  • Unsalted butter – 2 tablespoons

Instructions

Step 1: Bake the Pastry
Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper. Cut the puff pastry into circles using a round cutter and place them on the prepared baking sheet. Lightly prick each round with a fork to prevent excessive puffing. Bake for 15–18 minutes, or until golden and crisp. Allow them to cool completely.

Step 2: Make the Custard
In a saucepan, whisk together the milk, sugar, cornstarch, and salt. Heat over medium heat, stirring often, until the mixture begins to thicken. In a separate bowl, beat the egg yolks. Slowly whisk a small amount of the hot milk mixture into the yolks to warm them, then pour the mixture back into the saucepan. Continue cooking for about 5 minutes, stirring constantly until the custard becomes smooth and thick. Remove from heat and mix in the vanilla extract and butter.

Transfer the custard to a bowl, press plastic wrap directly onto the surface, and refrigerate for about 30 minutes until chilled.

Step 3: Assemble the Cream Puffs
Cut each cooled pastry round in half horizontally. Spoon or pipe the chilled custard onto the bottom halves, then place the tops back on. Finish by dusting with powdered sugar just before serving.
