Garbage Bread is the ultimate way to transform everyday ingredients into a crowd-pleasing meal or appetizer. Packed with seasoned beef, crispy bacon, tangy pickles, and melty cheese, all wrapped inside golden-brown bread, it delivers big flavor in every slice. Perfect for game days, family dinners, or casual gatherings, this stuffed bread is always a hit.
In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is tender, about 8–10 minutes. Break the beef into crumbles as it cooks. Season with salt and pepper.
Drain any excess grease and allow the mixture to cool slightly. Stir in the ketchup, mustard, and crumbled bacon until evenly combined.
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
On a lightly floured surface, roll the French bread dough into a rectangle approximately 12×8 inches.
Spread the beef mixture evenly over the dough, leaving about a 1-inch border around the edges. Scatter the chopped pickles over the top, then arrange the cheese slices evenly across the filling.
Starting from one long side, roll the dough into a tight log. Pinch the seams and ends closed, then place the loaf seam-side down on the prepared baking sheet.
Brush the top of the loaf with the beaten egg and sprinkle with sesame seeds.
Bake for 25–30 minutes, or until the crust is golden brown and the bread is fully cooked.
Allow the bread to cool for a few minutes before slicing.
Serve warm with Thousand Island dressing on the side for dipping.
With layers of beef, bacon, cheese, and pickles wrapped in a crisp, golden crust, Garbage Bread delivers all the flavors of a classic diner-style burger in a convenient, sliceable loaf that’s perfect for sharing.
