Flawless Potato Pancakes Recipe

Crispy Bacon Potato Pancakes

This dish combines frozen hash browns with bacon, eggs, cheese, and simple seasonings, then cooks them in bacon fat until perfectly crisp and golden.


Ingredients

  • Frozen hash browns – 4 cups
  • Bacon – 5 slices
  • Onion powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ½ teaspoon
  • Eggs, beaten – 2
  • Grated cheese (such as Cheddar) – ½ teaspoon

Instructions

Step 1: Cook the Bacon
Heat a large skillet over medium heat and cook the bacon until crisp, about 10 minutes, turning as needed.

Step 2: Set Aside Bacon
Transfer the bacon to a plate and crumble it once cooled. Leave the rendered bacon fat in the skillet.

Step 3: Prepare the Mixture
In a bowl, mix the hash browns, eggs, onion powder, salt, and pepper. Add the crumbled bacon and grated cheese, stirring until well combined.

Step 4: Form and Cook Pancakes
Divide the mixture into 8 equal portions and shape into patties. Warm the bacon drippings over medium heat and cook the pancakes for about 4 minutes per side, until crisp and golden.

Step 5: Serve
Serve hot and enjoy immediately.
