Delicately Soft Brioche


This recipe yields a light, fluffy brioche enriched with milk, butter, and a signature touch of melted butter and sesame seeds that elevate both its aroma and flavor.

Ingredients

How to Make Soft Brioche

Step 1 — Combine Dry Ingredients

Place the flour, cornstarch, salt, and dry yeast into a large bowl. (Though the directions mention baking powder, the ingredient list uses yeast—so yeast is the correct leavening.)

Step 2 — Bring the Dough Together

Add the melted butter, warm milk, vegetable oil, egg, and sugar. Mix and knead until the dough becomes elastic, smooth, and cohesive.

Step 3 — First Proof

Cover the bowl and allow the dough to rise in a warm place for about 1 hour, or until doubled in volume.

Step 4 — Shape & Add the Buttery Layer

Once risen, punch down the dough and divide it evenly. Roll each piece into a ball, flatten it into a small circle, then brush one side with melted butter and sprinkle on sesame seeds.

Step 5 — Assemble & Second Rise

Roll up each buttered dough disk and arrange them in your baking dish with the rolls slightly touching. Cover again and let them rise for another hour.

Step 6 — Bake Until Golden

Brush the tops with beaten egg yolk to create a glossy crust. Bake at 180°C/350°F for about 25 minutes, or until the brioche is golden brown and fully baked through.
