🍴 Directions

Preheat the Oven
Preheat to 350°F (175°C). Lightly grease a rectangular baking dish.

Sauté the Vegetables
Warm olive oil in a skillet over medium heat. Cook mushrooms until browned and tender, about 5 minutes. Add spinach and cook just until wilted, about 2 minutes. Remove from heat.

Assemble the Layers
Spread the cubed bread evenly in the prepared dish. Evenly distribute the mushroom and spinach mixture over the bread. Sprinkle shredded cheddar across the top.

Make the Custard
Whisk together eggs, milk, salt, pepper, and nutmeg in a bowl until fully blended. Pour the mixture evenly over the layered bread and vegetables.

Bake
Top with grated Parmesan. Cover with foil and bake for 30 minutes. Remove the foil and continue baking for 15 more minutes, until the center is set and the top turns lightly golden.

Serve
Sprinkle with fresh parsley before slicing. Serve warm.
