Mississippi Mud Cake

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large mixing bowl, stir together the melted butter and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Gently fold in the pecans and chocolate chips, if using.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake to keep the cake fudgy.
  8. Remove from the oven and let the cake cool completely in the pan.
  9. Once cooled, prepare the chocolate ganache topping.
