Baked Pineapple Recipe

Every family has a handful of treasured recipes — the quiet favorites that never make it into glossy cookbooks but always appear at holidays, potlucks, and slow Sunday gatherings. In my family, Pineapple Bake holds that special place. Sweet, buttery, and wonderfully simple, it tastes like something straight out of a classic Southern kitchen.

It’s best described as a cross between bread pudding and pineapple cobbler: lightly crisp around the edges, tender and custard-like in the center, with bursts of juicy pineapple in every bite. One serving is never quite enough.

This recipe came from my grandmother, written in her handwriting on a creased index card. She baked it for Easter mornings and family celebrations, but just as often on ordinary weekdays — usually because “pineapple was on sale.” That’s the charm of Pineapple Bake: easy enough for everyday baking, yet special enough to belong on any dessert table.

As it bakes, the kitchen fills with the warm aroma of butter, sugar, and pineapple. Fresh from the oven, the golden top gives way to a soft, tropical interior. Serve it warm with a scoop of vanilla ice cream or enjoy it chilled the next morning for breakfast (and yes, dessert for breakfast absolutely counts). Pineapple Bake is comfort food in its purest form.

Pineapple Bake Recipe

Ingredients

Instructions

1. Preheat the Oven
Preheat oven to 350°F (175°C).
Grease an 8×8-inch (or similar) baking dish.

2. Prepare the Mixture
In a large bowl, combine the crushed pineapple with its juice, melted butter, sugar, beaten eggs, and vanilla.
Stir until smooth and fully blended.

3. Add the Bread
Gently fold in the bread cubes until evenly coated.

4. Bake
Pour the mixture into the prepared dish.
Bake for 30–35 minutes, until the top is golden and the center is set.

5. Cool & Serve
Let rest for about 5 minutes before serving warm.
