1. Prepare the Batter

In a mixing bowl, crack the eggs and add the sugar and a pinch of salt. Whisk until smooth and slightly frothy.
Add the yogurt and mix until fully combined and creamy.
Stir in the baking soda, then slowly whisk in the chickpea flour to avoid lumps.
The batter should be thick yet pourable. If needed, thin it slightly with a splash of water or milk.

2. Make the Apple Filling

Peel and finely dice the apples.
Melt the butter in a pan over medium-low heat. Add the apples and sprinkle with sugar.
Cook for 5–7 minutes, stirring occasionally, until the apples soften and caramelize lightly. Set aside.
Tip: Pears, bananas, or berries are great alternatives.

3. Cook the Pancakes

Transfer the batter to a piping bag or a resealable bag with one corner snipped off for neat pancakes.
Heat a nonstick skillet over medium heat and lightly grease it.
Pipe or spoon small pancakes (about 2–3 inches wide) onto the pan.
Add a spoonful of apple filling to the center and cover with a little more batter.
Cook for 2–3 minutes until bubbles form and the edges look set. Flip carefully and cook for another 1–2 minutes until golden.

4. Serve
