Instructions

  1. Preheat and Prepare the Crust
    Heat your oven to 350°F (175°C) and lightly grease a 9-inch pie pan. In a mixing bowl, combine the crushed saltines, melted butter, and sugar until evenly blended. Press the mixture firmly into the pie dish, covering the bottom and sides.
  2. Bake the Crust
    Bake for 15 minutes, or until the crust turns a light golden brown. Remove from the oven and let it cool completely before adding the filling.
  3. Mix the Filling
    In a separate bowl, whisk together the sweetened condensed milk, egg yolks, fresh lemon juice, and zest until the mixture is completely smooth.
  4. Assemble and Bake
    Pour the lemon filling into the cooled crust. Return the pie to the oven and bake for another 15 minutes, or until the filling is just set.
  5. Cool and Chill
    Allow the pie to cool at room temperature before transferring it to the refrigerator. Chill for at least 4 hours, or until fully firm and ready to slice.
  6. Garnish and Serve
    Top with dollops of whipped cream and a sprinkle of lemon zest just before serving. Slice and enjoy the sweet, salty, and tangy goodness.
