Parisian Apple Cake

This Parisian Apple Cake is a delicate and aromatic treat that highlights the natural flavor of fresh apples. Light, buttery, and subtly spiced with cardamom and cinnamon, it’s a refined dessert that’s simple to make and perfect for any occasion.


Ingredients

  • Apples, peeled and diced – 3 large
  • All-purpose flour – 1 cup
  • Butter, softened – ½ cup
  • Granulated sugar – ½ cup
  • Brown sugar – 2 tablespoons
  • Eggs – 2
  • Dark rum – 1½ tablespoons
  • Apple cider vinegar – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Kosher salt – 1 teaspoon
  • Cinnamon – ½ teaspoon
  • Cardamom – ¼ teaspoon
  • Granulated sugar (for topping) – 2 tablespoons
  • Vanilla extract – ½ teaspoon

Instructions

1. Prep the Oven and Apples
Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan. Toss the diced apples with apple cider vinegar to prevent browning and add a subtle tang.

2. Combine Dry Ingredients
In a medium bowl, sift together the flour, baking powder, salt, cinnamon, and cardamom to evenly distribute the spices.

3. Cream Butter and Sugars
In a large bowl, beat the softened butter with the granulated and brown sugars until light and fluffy. Mix in the eggs one at a time, then stir in the dark rum and vanilla extract.

4. Fold in Apples
Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the diced apples, coating them evenly in the batter.

5. Bake the Cake
Pour the batter into the prepared pan and spread it evenly. Sprinkle the remaining granulated sugar on top for a lightly crisp crust. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool and Serve
Allow the cake to cool completely in the pan before slicing. This helps the apple juices settle and ensures a tender, flavorful texture.
