These potato wedges are seasoned to perfection, baked until crisp and golden, and finished with a gooey blend of cheddar and mozzarella—perfect as a snack or a comforting side.

Oven-Baked Cheesy Potato Wedges

Ingredients:

  • Large russet potatoes – 4
  • Olive oil – 2 tablespoons
  • Garlic powder – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Paprika – 1 teaspoon
  • Salt and pepper – to taste
  • Shredded cheddar cheese – 1 cup
  • Shredded mozzarella cheese – 1/2 cup
  • Fresh thyme leaves – 1 tablespoon

Instructions:

Step 1: Heat the Oven
Set your oven to 400°F (200°C) and line a baking tray with parchment paper.

Step 2: Prep the Potatoes
Rinse and scrub the potatoes thoroughly, then slice each one into 8 long wedges.

Step 3: Season the Wedges
In a large mixing bowl, toss the potato wedges with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper until well coated.

Step 4: Bake the Potatoes
Spread the wedges out on the prepared baking sheet in a single layer. Bake for 25–30 minutes, flipping them halfway through, until they’re crisp and golden.

Step 5: Add the Cheeses
Remove the tray from the oven and scatter the cheddar and mozzarella evenly over the hot wedges.

Step 6: Melt the Cheese
Return the tray to the oven for an additional 5–7 minutes, or until the cheese is melted and bubbling.

Step 7: Finish and Serve
Top with fresh thyme and enjoy while warm.
