Peanut Butter Ritz Bits Toffee

A perfect blend of sweet, salty, crunchy, and creamy, this Peanut Butter Ritz Bits Toffee is an irresistible treat. Simple to make and delightfully addictive, it’s a crowd-pleaser for any occasion.

Ingredients:

Semi-sweet chocolate chips3 cups
Brown sugar1 ½ cups
Butter1 ½ cups + 2 tbsp
Butter (for melting with chocolate)2 tbsp

Instructions:

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Arrange Crackers: Lay the Peanut Butter Ritz Bits in a single layer on a baking sheet.
  3. Prepare Toffee: In a medium saucepan, melt 1 ½ cups butter with the brown sugar over medium heat. Stir constantly and bring to a boil for 3–4 minutes until thickened.
  4. Coat Crackers: Carefully pour the hot toffee over the crackers, spreading evenly.
  5. Bake: Place in the oven for 6–8 minutes until the toffee bubbles. Remove and let cool for 5 minutes.
  6. Melt Chocolate: In a microwave-safe bowl, combine the remaining 2 tablespoons butter with the chocolate chips. Heat in 30-second intervals, stirring until smooth.
  7. Top with Chocolate: Pour the melted chocolate over the toffee layer and spread evenly.
  8. Chill: Refrigerate for about 1 hour or until the chocolate is set.
  9. Serve: Cut into pieces and enjoy this sweet and crunchy treat!
