This easy Tex-Mex–style casserole stacks flavorful ground beef mixed with salsa between layers of soft corn tortillas, then bakes everything beneath a blanket of melty cheddar for a simple, cheesy crowd-pleaser.
| Ingredient | Amount |
|---|---|
| Ground beef | 1 pound |
| Shredded cheddar cheese | 8 ounces |
| Salsa | 2 cups |
| Corn tortillas | 10 |
Step 1: Preheat & Brown the Beef
Set your oven to 350°F (175°C). In a large skillet, cook the ground beef over medium heat until no pink remains. Drain off any extra grease.
Step 2: Mix in the Salsa
Add the salsa to the beef and let the mixture simmer briefly so the flavors come together.
Step 3: Start Layering
In a 9×13-inch baking dish, lay down half of the corn tortillas. Spoon half of the beef-and-salsa mixture on top, then sprinkle with half of the cheddar.
Step 4: Build the Second Layer
Repeat the process with the remaining tortillas, the rest of the beef mixture, and the final portion of cheese.
Step 5: Bake It
Place the dish in the oven and bake for around 20 minutes, or until the cheese is fully melted, bubbly, and the casserole is warmed through.
Step 6: Serve
Allow the casserole to rest for a few minutes before cutting so it can firm up slightly. Then serve and enjoy!
