Make-Ahead Sausage Breakfast Casserole

This make-ahead breakfast casserole is a convenient and satisfying way to start the day. Packed with savory sausage, crispy hashbrowns, green chiles, and plenty of cheddar cheese, it’s all held together by a rich egg custard that bakes up golden and delicious. Preparing it the night before allows the flavors to meld and makes busy mornings much easier.

Perfect for holiday breakfasts, weekend brunches, or feeding a crowd, this casserole can be assembled ahead of time and baked when needed.

Ingredients

Protein & Base

  • 2 lbs ground breakfast sausage
  • 2 lbs frozen hashbrown potatoes
  • 2 cups shredded cheddar cheese

Custard Mixture

  • 9 large eggs
  • 2 cups milk
  • 1 can diced green chiles, drained
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste

Directions

Step 1: Brown the Sausage

Preheat the oven to 350°F (175°C). In a large skillet over medium-high heat, cook the breakfast sausage until browned and fully cooked, breaking it into crumbles as it cooks. Remove the sausage and set aside, leaving any drippings in the skillet.

Step 2: Cook the Hashbrowns

Add the frozen hashbrowns to the same skillet. Cook for 8–10 minutes, stirring occasionally, until thawed and lightly browned around the edges.

Step 3: Assemble the Casserole

Lightly grease a 9×13-inch baking dish. Spread the hashbrowns evenly across the bottom. Layer the cooked sausage over the potatoes, then sprinkle with the cheddar cheese and green chiles.

Step 4: Mix the Custard

In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well blended.

Step 5: Add the Custard

Pour the egg mixture evenly over the casserole, ensuring it reaches all areas of the dish.

Step 6: Bake or Refrigerate

For Immediate Baking:
Bake uncovered for 35–40 minutes, or until the center is set and the eggs are fully cooked.

For Make-Ahead Preparation:
Cover the dish tightly and refrigerate for up to 24 hours. When ready to bake, remove from the refrigerator and bake as directed, adding 5–10 extra minutes if needed.

Serving Suggestions

  • Garnish with sliced green onions or fresh parsley.
  • Serve with fresh fruit or a simple green salad.
  • Add salsa, hot sauce, or sour cream for extra flavor.
  • Pair with toast, biscuits, or English muffins.
