  6. Heat the olive oil in an oven-safe skillet over medium heat. Sear the pork on all sides until the bacon is nicely browned, about 5–7 minutes.
  7. Place the skillet in the oven and roast for 20–25 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Remove from the oven and allow the pork to rest for 5 minutes before slicing.
  9. Slice, serve, and enjoy.
