Cottage Cheese Ice Cream

This clever recipe turns rich, high-protein cottage cheese into a smooth, creamy dessert. With the sweetness of honey, the richness of peanut butter, and a touch of chocolate, it’s a wholesome frozen treat that feels indulgent—without the guilt.


Ingredients

Honey1/4 to 1/3 cup (adjust to taste)
Peanut butter3 tablespoons
Chocolate chips3 tablespoons
Vanilla extract1 teaspoon

Instructions

Step 1: Blend Until Smooth
Add the cottage cheese, peanut butter, honey, and vanilla extract to a blender or food processor. Blend on high until the mixture is silky smooth with no visible curds remaining.

Step 2: Chill the Mixture
Transfer the blended base to a bowl and refrigerate it for at least 2 hours. This helps the texture set for better churning.

Step 3: Churn the Ice Cream
Pour the chilled mixture into your ice cream maker and churn according to your machine’s instructions.

Step 4: Mix in Chocolate Chips
During the final 5 minutes of churning, add in the chocolate chips to evenly distribute them throughout the ice cream.

Step 5: Freeze to Set
Scoop the churned ice cream into a freezer-safe container and freeze for 2 to 4 hours, or until firm and scoopable.

Step 6: Serve and Enjoy
Before serving, allow the ice cream to sit at room temperature for a few minutes to soften slightly. Then scoop and enjoy your creamy, protein-packed dessert!
