How to Make Baked Chicken Ricotta Meatballs with Spinach Alfredo Sauce

Step 1: Get the Oven Ready
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Step 2: Combine the Meatball Ingredients
In a large bowl, mix together the ground chicken, ricotta, Parmesan, breadcrumbs, egg, minced garlic, Italian seasoning, plus salt and pepper. Blend until the mixture is uniform.

Step 3: Shape and Cook
Roll the mixture into golf-ball-sized meatballs and place them on the prepared sheet. Drizzle lightly with olive oil. Bake for 20–25 minutes, or until cooked through and golden brown (165°F / 74°C inside).

Step 4: Start the Alfredo Base
While the meatballs are in the oven, melt the butter in a large skillet over medium heat.

Step 5: Make the Roux
Whisk in the flour and cook for about a minute, creating a smooth paste.

Step 6: Build the Sauce
Gradually add the milk and heavy cream, whisking continuously to avoid lumps. Let the mixture simmer until it thickens.

Step 7: Add the Parmesan and Seasonings
Stir in the grated Parmesan, nutmeg, salt, and pepper. Keep stirring until the sauce turns silky and the cheese has melted.

Step 8: Add Spinach
Add the chopped spinach and cook for 2–3 minutes, just until it softens and blends into the sauce.

Step 9: Plate and Serve
Top the warm, baked meatballs with plenty of the creamy Spinach Alfredo Sauce and serve immediately.
