This classic Italian favorite transforms a simple mozzarella sandwich into an irresistible crispy, golden delight. Layers of mozzarella are tucked between soft white bread, coated in a rich egg mixture, and finished with a seasoned flour and breadcrumb coating before being fried to perfection. The result is a crunchy exterior that gives way to warm, melted cheese with every bite—a true comfort-food classic inspired by the flavors of Naples.

Instructions

Step 1: Assemble the Sandwiches

Arrange the bread slices on a clean work surface. If using mayonnaise, spread about 2½ teaspoons onto one side of each slice. Divide the mozzarella evenly between two slices, leaving a small border around the edges. Top with the remaining bread slices to form two sandwiches.

Step 2: Prepare the Coating Stations

Place two shallow bowls side by side. In the first bowl, whisk together the eggs and milk with a pinch of salt and pepper until smooth.

In the second bowl, combine the flour and panko breadcrumbs, if using. Season lightly with salt and pepper and mix well. Line a plate or tray with parchment paper and set aside.

Step 3: Coat the Sandwiches

Working one sandwich at a time, dip it into the egg mixture, ensuring all sides are evenly coated. Allow any excess liquid to drip off before transferring it to the flour mixture.

Coat thoroughly, gently pressing the flour mixture onto the bread to create an even outer layer. Place the coated sandwich on the prepared tray and repeat with the second sandwich.

Step 4: Chill Before Frying

Transfer the tray to the refrigerator and chill the sandwiches for 20 minutes.

Step 5: Heat the Oil

While the sandwiches chill, pour the vegetable oil into a heavy skillet or Dutch oven. Heat over medium-high heat until the oil is shimmering and ready for frying.

Step 6: Fry Until Crisp and Golden

Carefully place the chilled sandwiches into the hot oil. Cook for about 2 minutes on the first side, or until deeply golden and crisp.

Turn the sandwiches carefully and fry for another 2 minutes on the opposite side until evenly browned and crunchy.

Step 7: Slice and Serve

Transfer the sandwiches to a cutting board and allow any excess oil to drain briefly.

For the cleanest cut, use a serrated knife and gently slice through the sandwich without pressing down too firmly. Serve immediately while the crust is crisp and the mozzarella is perfectly melted.
