Preheat your oven to 350°F (175°C). In a medium bowl, whisk together 2 eggs, 2/3 cup milk, and the crushed Ritz crackers until combined.
2. Add Flavor & Seasoning
Fold in the diced onion and shredded cheddar. Season with salt and pepper to taste.
