This indulgent, silky garlic pasta is the perfect answer to weeknight cravings. Rich with cream, loaded with garlic, and finished with a generous handful of Parmesan, it’s a simple yet satisfying dish that comes together in minutes.
| Ingredient | Quantity |
|---|---|
| Spaghetti or pasta of choice | 300g (10 oz) |
| Garlic cloves, peeled and smashed | 6–8 |
| Butter | 2 tbsp |
| Olive oil | 1 tbsp |
| Heavy cream | 1½ cups |
| Parmesan cheese, grated | ½ cup |
| Ground black pepper | ¼ tsp |
| Salt | To taste |
| Fresh parsley or basil, chopped (optional) | For garnish |
| Red pepper flakes (optional) | For heat |
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, according to package directions. Drain and set aside, reserving ½ cup of the pasta water.
Step 2: Sauté the Garlic
Heat butter and olive oil in a large skillet over medium heat. Add the smashed garlic and sauté for 3–4 minutes until golden and aromatic. Stir frequently and avoid burning.
Step 3: Pour in the Cream
Lower the heat and carefully add the heavy cream to the skillet. Stir gently, allowing the mixture to warm through for 2–3 minutes.
Step 4: Add Parmesan and Season
Sprinkle in the grated Parmesan and stir until it’s fully melted into the sauce. Season with black pepper and salt to taste. If the sauce thickens too much, stir in a little of the reserved pasta water to loosen it.
Step 5: Toss with Pasta
Add the drained spaghetti to the pan and toss to coat in the creamy garlic sauce. Add a bit more pasta water if needed to achieve your desired consistency.
Step 6: Garnish and Serve
Remove from heat and serve immediately, topped with fresh herbs and a pinch of red pepper flakes if you enjoy a little spice.
