These Mexican pizzas are loaded with flavor—crispy tortillas stacked with seasoned beef, creamy refried beans, melted cheese, and all your favorite toppings. Quick to prepare and family-approved, it’s a meal that checks all the boxes.


Ingredients

Instructions

  1. Cook the Beef
    In a skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess grease. Stir in the taco seasoning and water, then let it simmer for about 5 minutes until thickened. Remove from heat and set aside.
  2. Crisp the Tortillas
    Heat a little vegetable oil in a large skillet over medium heat. Fry the tortillas one at a time for 1–2 minutes per side, or until they’re crisp and golden. Transfer to a plate lined with paper towels to drain. Repeat with all tortillas, adding oil as needed.
  3. Assemble the Pizzas
    Preheat your oven to 400°F (200°C). Arrange three of the crispy tortillas on a baking sheet. Spread refried beans evenly over each, then add a layer of seasoned ground beef. Top with another tortilla to form a “pizza” base. Spread salsa or taco sauce on top, then sprinkle with cheese, tomatoes, olives, and red onion.
  4. Bake
    Place the baking sheet in the oven and bake for 8–10 minutes, or until the cheese is melted and bubbling.
  5. Garnish and Serve
    Once out of the oven, let the pizzas cool slightly. Finish with sliced green onions for a fresh bite. Cut each pizza into quarters and serve warm.
