This 3-Ingredient Cheesy Rice Casserole is a comforting, effortless side made from pantry staples. Creamy, cheesy, and satisfying, it pairs perfectly with roasted meats, grilled vegetables, or any main dish that could use a cozy companion.

Ingredients

Shredded cheddar cheese (divided)3 cups
Condensed cream of chicken or mushroom soup2 cans (10½ oz each)

Instructions

Step 1: Prep Oven and Dish
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Cook the Rice
Cook the rice according to package directions using only water. Once done, fluff with a fork and set aside.

Step 3: Mix Ingredients
In a large bowl, combine the hot rice with 2 cups of shredded cheddar and both cans of condensed soup. Stir until the mixture is smooth and the cheese begins to melt.

Step 4: Adjust Seasoning
Taste the mixture and add salt or pepper if needed, based on the saltiness of the soup and cheese.

Step 5: Assemble Casserole
Spread the rice mixture evenly into the prepared baking dish.

Step 6: Top and Bake
Sprinkle the remaining 1 cup of cheddar on top. Bake for 20–25 minutes, until the casserole is bubbly and lightly golden.

Step 7: Rest and Serve
Remove from the oven and let it sit for 5 minutes to firm up slightly, making it easier to scoop.
