If you’re in the “love it” category, congratulations—you’ve just discovered your new obsession. These Coconut Chewies are buttery, nutty, and loaded with sweet coconut goodness. The top gets beautifully golden and crisp, while the inside stays irresistibly soft and chewy. They’re easy to whip up, dangerously delicious, and ideal for sharing (though we won’t judge if you keep them all to yourself).

Sweetened shredded coconut1½ cups

👩‍🍳 How to Make Them

1. Get Set
Preheat your oven to 350°F (175°C).
Grease an 8×8-inch baking pan and set it aside.

2. Brown the Butter
In a large saucepan over medium-high heat, melt the butter.
Keep swirling the pan until the butter turns a deep golden brown with a nutty aroma.
Remove from heat right away so it doesn’t burn.

3. Combine the Wet Ingredients
Add the brown sugar to the warm butter and stir until smooth and glossy.
Mix in the eggs and vanilla until the mixture is well blended.

4. Add the Dry Stuff
Stir in the flour, baking powder, and salt just until everything’s incorporated.
Fold in the shredded coconut.

5. Time to Bake
Spread the batter evenly in your prepared baking dish.
Bake for 40–45 minutes. To avoid over-browning, loosely cover the top with foil for the last 10 minutes.
Let them cool completely before cutting into chewy, golden bars.
