Step 1: Set Up the Base

  • Preheat the Oven: Set your oven to 350°F (175°C).
  • Prepare a Pan: Line a large baking sheet with parchment paper or a silicone mat.
  • Measure Cereal: Pour 5 cups of Honeycomb cereal into a large bowl and set it aside.

Step 2: Make the Caramel Sauce

  • Combine in Saucepan: In a medium saucepan, mix the brown sugar, butter, and corn syrup.
  • Bring to a Boil: Stir over medium heat until the mixture starts bubbling. Let it boil for 2 minutes.
  • Add Final Touches: Remove from heat and stir in the vanilla extract and baking soda. It will foam up—this is normal!

Step 3: Coat & Bake

  • Mix with Cereal: Pour the hot caramel mixture over the cereal. Gently stir to coat everything evenly.
  • Spread Out: Transfer the coated cereal to the prepared baking sheet and spread it into a single layer.
  • Bake: Bake for 10–12 minutes, stirring once halfway through for even crisping.

Step 4: Add Churro Flavor

  • Mix Cinnamon-Sugar: In a small bowl, stir together the granulated sugar and cinnamon.
  • Sprinkle on Top: While the cereal is still hot from the oven, immediately toss it with the cinnamon-sugar mix until fully coated.

  • Let Cool: Allow the churro cereal mix to cool completely on the pan.
  • Store or Serve: Once cooled, transfer to a bowl for snacking or an airtight container to store.
