1. Prepare the Crust

  • In a food processor, blend the flour, salt, and sugar.
  • Add the cold butter and pulse until the mixture has coarse, crumb-like texture.
  • Slowly add the ice water a tablespoon at a time, pulsing until the dough just starts to come together.
  • Turn the dough out onto a surface, knead it gently, then divide into two equal discs.
  • Wrap the discs in plastic wrap and chill for at least 1 hour or overnight.

2. Preheat the Oven
Set your oven to 350°F (175°C) to warm up.

3. Roll Out the Dough

  • On a lightly floured surface, roll one disc into a circle large enough for your pie dish.
  • Gently place it into the dish, trimming excess dough and shaping the edges as you like.

4. Mix the Filling

  • In a mixing bowl, whisk the eggs with the cream, milk, salt, and pepper until smooth.
  • Fold in the chopped bacon and shredded cheddar cheese.

5. Assemble and Bake

  • Pour the filling into the prepared crust.
  • Bake for 45–50 minutes, or until the center is firm and the top is golden brown.

6. Cool and Enjoy

  • Let the quiche cool for about 10–15 minutes before cutting.
  • Serve warm or at room temperature — delicious either way!
