Slow Cooker Amish Snow Day Soup (Corn Chowder)
Ingredients:

  • Corn kernels (fresh or frozen) — 4 cups
  • Onion, diced — 1
  • Potatoes, peeled and chopped — 3
  • Carrots, diced — 2
  • Celery, diced — 3 stalks
  • Chicken or vegetable broth — 4 cups
  • Milk — 2 cups
  • Heavy cream — 1 cup
  • Dried thyme — 1 teaspoon
  • Salt and pepper — to taste
  • Fresh parsley, chopped — for garnish

How to Make Amish Snow Day Soup:
Step 1: Load the Slow Cooker
Place the corn, onion, potatoes, carrots, and celery into the slow cooker. Pour in the broth and stir everything together. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the vegetables are fork-tender.

Step 2: Blend for Texture
Once cooked, use an immersion blender to partially purée the soup. Blend just enough to make the base creamy, but leave some chunks of vegetables and corn for added texture.

Step 3: Warm the Dairy
In a saucepan over medium heat, gently warm the milk and cream until hot, but do not let it boil.

Step 4: Combine and Season
Add the warmed milk and cream to the slow cooker. Stir to combine, then season with thyme, salt, and pepper to taste.

Step 5: Let Flavors Develop
Allow the soup to simmer on LOW or WARM for an additional 15–20 minutes so the flavors meld.

Step 6: Garnish and Serve
Ladle into bowls, top with chopped fresh parsley, and enjoy warm.
