What I discovered was a foolproof, forgiving recipe that quickly became a staple in my kitchen. Whether paired with a rich soup or simply enjoyed with butter, this bread hits the spot every time.

Baked in a Dutch oven, the result is a golden, crackly crust with an airy, tender interior—all without kneading, without stress, and without fail.

1. Combine the Ingredients
In a large bowl, mix the flour, yeast, and salt.

Let it rest at room temperature for 12 to 18 hours, until it’s puffed up and bubbly.

3. Preheat the Oven
Preheat your oven to 450°F (230°C).
Place your Dutch oven (with its lid) inside to heat for 30 minutes.

4. Shape the Dough
Gently turn the dough onto a floured surface.
Form it into a loose ball—no kneading required, just a delicate touch.

5. Bake the Bread
Carefully place the dough into the preheated Dutch oven.
Cover and bake for 30 minutes.
Remove the lid and bake another 10–15 minutes, until deeply golden and crisp.

6. Cool and Slice
Transfer the baked loaf to a cooling rack.
Let it cool before slicing for the best texture.
Serve warm, toasted, or however you love it.
