🍲 Instructions:
1. Chop the Veggies
Begin by chopping your bell peppers into bite-sized pieces. Set them aside.
2. Sauté Onion & Garlic
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until fragrant and translucent, about 3–4 minutes.
3. Cook the Ground Beef
Add the ground beef to the pot. Brown it thoroughly, breaking it apart with a spoon. Drain off any excess grease once fully cooked.
4. Season the Meat
Stir in the paprika, Italian seasoning, and salt and pepper to taste. Mix well to coat the meat with the spices.
5. Pour in the Broth
Add the beef broth to the pot and bring it to a simmer.
6. Add Rice, Tomatoes, and Peppers
Stir in the uncooked rice, diced tomatoes (with juices), tomato sauce, and the chopped bell peppers.
7. Simmer Until Done
Let the soup gently simmer for 15–20 minutes, or until the rice is tender and the bell peppers are soft.
8. Serve and Enjoy
