Step 1: Cook Sausage & Prep Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it into crumbles as it cooks.

Step 2: Create the Gravy
Sprinkle the flour evenly over the cooked sausage. Stir thoroughly and cook for 1–2 minutes to get rid of the raw flour taste. Gradually pour in the milk while stirring constantly to keep the mixture smooth.

Step 3: Thicken the Gravy
Let the mixture come to a simmer, stirring occasionally. Cook for about 5–7 minutes, or until the gravy has thickened to your liking. Season with salt and pepper. Take off the heat and let it cool slightly.

Step 4: Assemble the Pie
On a lightly floured surface, roll out the puff pastry sheet to fit your baking sheet. Place the pastry onto the prepared sheet. Spoon the cooled sausage gravy onto the center, leaving a border around the edges. Fold the edges up and over the filling to form a rustic crust.

Step 5: Bake
Beat the egg in a small bowl and brush it over the exposed pastry edges for a shiny, golden crust. Bake for 25–30 minutes or until the pastry is puffed and golden brown.

Step 6: Serve
Allow the pie to cool for a few minutes before slicing. Garnish with chopped parsley if desired, and serve warm.
