🔪 Instructions

1. Prep the Pork
Trim the roast, leaving about ¼ inch of fat to enhance flavor during cooking.

2. Season Well
In a small bowl, combine all the dry spices. Rub the mix evenly over the pork. Cover and refrigerate for 1 to 2 hours to let the flavors develop.

3. Sear for Depth
Heat olive oil in a Dutch oven or large skillet over medium-high heat. Sear the pork on all sides until it develops a rich, golden crust.

4. Arrange for Roasting
Place the pork loin in a roasting pan or baking dish. Surround it with the carrots, potatoes, and onions for a complete one-pan meal.

5. Roast It
Preheat your oven to 375°F. Roast the pork for 60–75 minutes, or until a thermometer inserted in the thickest part reads 145°F.

6. Make the Glaze
While the pork roasts, prepare the glaze. Melt the butter in a saucepan over medium heat. Add garlic and sauté for about 1 minute. Stir in the juice, honey, soy sauce, ketchup, vinegar, mustard, fresh ginger, salt, and pepper. Simmer for 2–3 minutes until slightly thickened.

7. Glaze and Repeat
Every 15 minutes during roasting, brush the pork with the glaze to create a beautifully caramelized finish.

8. Rest & Serve
Once fully cooked, remove the roast from the oven and tent with foil. Let it rest for 15 minutes to lock in juices. Slice and serve with the roasted vegetables and an extra drizzle of the glaze.
