Ingredients
Ingredient | Quantity |
---|---|
Whole garlic heads | 3 |
Olive oil | As needed |
Unsalted butter, softened | 2 cups (4 sticks) |
Fresh parsley, chopped | ½ cup |
Kosher salt | 2 teaspoons |
Ground black pepper | 1 teaspoon |
Italian seasoning | ½ teaspoon |
Instructions
1. Roast the Garlic
Preheat the oven to 350°F (175°C). Trim about ¼ inch off the tops of the garlic heads, keeping the bulbs intact. Set the garlic on a large sheet of foil, drizzle generously with olive oil, and sprinkle lightly with salt. Wrap the foil tightly around the garlic and roast for 40–50 minutes, or until the cloves are tender and deeply golden.
2. Prepare the Spread
Once the roasted garlic has cooled enough to handle, squeeze the soft cloves into a mixing bowl. Add in the softened butter, chopped parsley, salt, pepper, and Italian seasoning.
3. Mix It All Together
Using a fork, mash and stir the ingredients until everything is well blended. The garlic should be evenly mixed through the butter, with some small pieces still visible.
4. Serve or Store
You can use the spread right away on warm bread, toast, or as a flavorful finishing touch for dishes. To store, transfer to a container and refrigerate until needed.
