Pecan Pie Cobbler, Don’t Lose This Recipe

This rich Pecan Pie Cobbler is a decadent layered dessert that combines two buttery pie crusts with a classic pecan filling. The layers are finished with extra filling and pecan halves on top, creating a true cobbler-style texture that’s gooey, nutty, and irresistible.

Pecan Pie Cobbler

Ingredients

Instructions

Step 1: Preheat the Oven and Prepare the Dish
Preheat your oven to 425°F (the temperature will be reduced later). Lightly grease the bottom of a 9″ × 13″ baking dish with nonstick spray.

Step 2: Add the First Pie Crust
Roll out one pie crust into a rectangle and place it in the prepared dish. It does not need to extend up the sides.

Step 3: Make the Filling
In a large bowl, combine the brown sugar, ½ cup melted butter, light corn syrup, eggs, and vanilla extract. Stir until fully blended.

Step 4: Stir in the Pecans
Add the chopped pecans to the filling mixture and mix well.

Step 5: Create the First Layer
Pour half of the pecan filling evenly over the pie crust in the baking dish.

Step 6: Add the Second Pie Crust
Roll out the remaining pie crust and place it gently over the filling.

Step 7: Bake the Bottom Layers
Brush or spoon the remaining tablespoon of melted butter over the top crust. Bake for about 15 minutes, or until the crust turns golden brown.

Step 8: Reduce Oven Temperature
Remove the dish from the oven and immediately lower the oven temperature to 350°F.

Step 9: Add the Final Layer and Topping
Stir the remaining pecan filling and pour it evenly over the baked crust. Sprinkle the pecan halves over the top, arranging them as desired.

Step 10: Final Bake
Return the cobbler to the oven and bake at 350°F for 30 minutes.

Step 11: Cool Before Serving
Allow the pecan pie cobbler to cool for at least one hour before serving so it can fully set.
