Cowboy Meatloaf and Potato Casserole
A true comfort food classic, this casserole combines a flavorful, homestyle meatloaf with thinly sliced potatoes, all baked together under a golden layer of melted cheddar. It’s a filling, fuss-free meal perfect for weeknights or family dinners.

For the Meatloaf & Casserole Base:

👨‍🍳 Directions:

Step 1: Preheat and Prepare

Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.

Step 2: Mix the Meatloaf

In a large mixing bowl, add the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix everything together thoroughly until well combined.

Step 3: Assemble the Layers

  • Place half of the sliced potatoes in an even layer at the bottom of the prepared dish.
  • Shape the meat mixture into a loaf and set it directly on top of the potato layer.
  • Cover the meatloaf with the remaining sliced potatoes, arranging them evenly across the top.

Step 4: Bake and Add Cheese

  • Cover the dish tightly with aluminum foil and bake for 45 minutes.
  • Remove the foil, sprinkle shredded cheddar cheese over the top, and return to the oven for another 15–20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

Step 5: Rest and Serve

Allow the casserole to rest for a few minutes before slicing. Garnish with chopped fresh parsley if using. Serve warm and enjoy this hearty, cowboy-approved dish!
