Golden Roasted Potatoes with Balsamic-Glazed Onions

A duet of crispy, seasoned potatoes and tender, caramelized onions with a sweet balsamic glaze, this side dish strikes a delicious balance of savory and sweet—all ready in under 40 minutes. It’s the perfect pairing for grilled meats, roast dinners, or even as a standalone comfort dish.


🥔 Ingredients

For the Potato Crescendo:

  • 4 large russet potatoes, peeled and thinly sliced
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper, to taste

For the Onion Overture:

  • 2 large onions, thinly sliced
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

👩‍🍳 Instructions

1. Get the Oven Ready
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment or foil for easy cleanup.

2. Season the Potatoes
In a large bowl, toss the sliced potatoes with ¼ cup olive oil, garlic powder, paprika, salt, and pepper. Make sure each slice is evenly coated in the oil and spices.

3. Prepare the Onions
In a separate bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper. Add the sliced onions and toss to coat them thoroughly in the glaze.

4. Layer on the Baking Sheet
Arrange the seasoned potato slices in a single layer on the prepared baking sheet. Scatter the marinated onions over the top of the potatoes.

5. Roast to Perfection
Place the tray in the oven and roast for 30–35 minutes, or until the potatoes are crisp and golden and the onions are tender and caramelized. Stir halfway through for even browning.
