Meatloaf like Cracker Barrel’s”

This hearty meatloaf gets extra tenderness from crushed Ritz crackers and is topped with a sweet and tangy glaze, making it a true comfort food favorite.

Cracker-Style Meatloaf

Ingredients – Meatloaf

  • Eggs (room temperature) – 2
  • Whole milk – 2/3 cup
  • Ritz crackers, crushed – 25
  • Large onion, finely diced – 1
  • Sharp cheddar, shredded – 1/2 cup
  • Salt – 1 tsp
  • Black pepper – 1/4 tsp
  • Ground beef – 1 1/2 lbs

Ingredients – Glaze

  • Ketchup – 1/2 cup
  • Brown sugar – 1/2 cup
  • Mustard – 1 tsp

Instructions

1. Preheat & Mix Egg Base
Preheat your oven to 350°F (175°C). In a medium bowl, whisk together 2 eggs, 2/3 cup milk, and the crushed Ritz crackers until combined.

2. Add Flavor & Seasoning
Fold in the diced onion and shredded cheddar. Season with salt and pepper to taste.

3. Combine with Ground Beef
Add the ground beef to the mixture. Gently knead with your hands until evenly blended—avoid overworking the meat.

4. Bake the Meatloaf
Lightly spray an 8×8-inch baking dish with nonstick spray. Press the meat mixture into the dish. Bake for 45 minutes until mostly cooked.

5. Make the Glaze
In a small bowl, mix together the ketchup, brown sugar, and mustard until smooth.

6. Apply First Glaze
Spread half of the glaze over the meatloaf. Return to the oven and bake for an additional 15 minutes.

7. Apply Second Glaze & Finish Cooking
Top with the remaining glaze and bake another 15 minutes, or until the internal temperature reaches 165°F (75°C).
