Instructions:

  1. Preheat & Prep
    Preheat your oven to 350°F. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Mix the Filling
    In a large mixing bowl, stir together half of the shredded cheddar, sour cream, milk, melted butter, crumbled bacon, chopped onion, minced garlic, paprika, thyme, salt, and pepper until fully combined.
  3. Layer the Potatoes
    Arrange half of the sliced potatoes in an even layer in the baking dish. Spread half of the cheese mixture over the top. Repeat with the remaining potatoes and cheese mixture.
  4. Bake Covered
    Cover the dish tightly with foil and bake for 60 minutes.
  5. Finish Uncovered
    Remove the foil, sprinkle the remaining shredded cheddar (and extra bacon if desired) over the top. Return to the oven and bake uncovered for 20–30 minutes, or until the top is bubbly and golden brown.
  6. Rest & Garnish
