Mashed Potato Muffins
Ingredients:
- Mashed potatoes (fresh or leftover) – 4 cups
- Shredded cheddar cheese – 1 cup
- Sour cream – ½ cup
- Large eggs, lightly beaten – 2
- Chopped green onions – ¼ cup
- Crumbled cooked bacon – ¼ cup (optional)
- Salt and pepper – to taste
Directions
1. Prep Oven and Tin: Preheat your oven to 375°F (190°C) and generously grease a muffin tin.
2. Mix Ingredients: In a large bowl, combine mashed potatoes, cheddar, sour cream, eggs, green onions, and bacon (if using). Season with salt and pepper and mix thoroughly.
3. Fill Muffin Cups: Spoon the mixture into the muffin tin, filling each cavity completely.
4. Bake: Place in the oven and bake 20–25 minutes, or until the tops are golden and the muffins feel set.
