Ingredients
Ingredient | Quantity |
---|---|
Ground beef | 1 lb |
Taco seasoning | 1 packet |
Water | ½ cup |
Refried beans | 1 cup |
Flour tortillas (8-inch) | 6 |
Shredded Mexican cheese blend | 1 cup |
Diced tomatoes | ½ cup |
Sliced black olives | ¼ cup |
Diced red onion | ¼ cup |
Sliced green onions | ¼ cup |
Salsa or taco sauce | ¼ cup |
Vegetable oil | 2 tablespoons |
Instructions
- Cook the Beef
In a skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess grease. Stir in the taco seasoning and water, then let it simmer for about 5 minutes until thickened. Remove from heat and set aside. - Crisp the Tortillas
Heat a little vegetable oil in a large skillet over medium heat. Fry the tortillas one at a time for 1–2 minutes per side, or until they’re crisp and golden. Transfer to a plate lined with paper towels to drain. Repeat with all tortillas, adding oil as needed. - Assemble the Pizzas
Preheat your oven to 400°F (200°C). Arrange three of the crispy tortillas on a baking sheet. Spread refried beans evenly over each, then add a layer of seasoned ground beef. Top with another tortilla to form a “pizza” base. Spread salsa or taco sauce on top, then sprinkle with cheese, tomatoes, olives, and red onion. - Bake
Place the baking sheet in the oven and bake for 8–10 minutes, or until the cheese is melted and bubbling. - Garnish and Serve
Once out of the oven, let the pizzas cool slightly. Finish with sliced green onions for a fresh bite. Cut each pizza into quarters and serve warm.
Tips & Variations
- Tortilla Choice: Choose flour for a softer bite or corn tortillas for a crispier finish.
- Crisping Matters: Make sure your tortillas are nicely browned and crisp—they’re the key to holding up the toppings.
- Meatless Option: Swap out the beef for black beans or plant-based meat for a tasty vegetarian version.
