Ham and Egg Breakfast Cups

These ham and egg breakfast cups are a quick, satisfying option made with simple ingredients and very little effort. Eggs, cream, cheddar, and a touch of pepper are combined and poured into slices of deli ham shaped into cups in a muffin tin. In just minutes, they bake into warm, protein-rich bites that are both convenient and filling. It’s a practical, no-fuss recipe—great for busy mornings, meal prep, or feeding a group.

Enjoy them warm with fresh fruit like berries or orange slices for a bit of brightness, or add cherry tomatoes for a savory side. For brunch, pair with a light salad or yogurt. Kids can have them with toast or an English muffin, while they’re also perfect on their own with coffee or tea.


Ham and Egg Breakfast Cups

Ingredients:

  • 12 slices deli ham (thin, round)
  • 8 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp black pepper
  • 1/4 tsp salt (optional)
  • 1 tbsp nonstick spray or butter (for greasing)

Directions:

  1. Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
  2. Press one slice of ham into each cup to form a shell.
  3. In a bowl, whisk together eggs, cream, cheddar, pepper, and salt until well combined.
  4. Place the muffin tin on a baking sheet and pour the mixture into each ham cup, filling about 3/4 full.
  5. Bake for 15–18 minutes, until the centers are set and the tops are lightly golden.
  6. Let cool for 5 minutes, then gently remove from the pan.

Serve warm, or let cool and refrigerate for an easy grab-and-go breakfast.
