Easy Southern Smothered Chicken Thighs

This dish is an ideal weeknight comfort meal: tender chicken thighs baked in a creamy, savory sauce that requires very little preparation. Instead of making gravy on the stovetop, you simply mix a smooth combination of cream of chicken soup, milk, and a few common spices, then pour it over the chicken. As it bakes, the sauce thickens and surrounds the meat, giving it that classic “smothered” Southern-style taste.

It’s easy, budget-friendly, and perfect for busy evenings—just place it in the oven and let the delicious aroma fill your kitchen while it cooks.

Serve these smothered chicken thighs over fluffy white rice, buttered egg noodles, or smooth mashed potatoes so you can enjoy every bit of the creamy sauce. Pair the dish with sides like green beans, steamed broccoli, or a crisp salad for balance. For a traditional Southern-style meal, add skillet cornbread or warm dinner rolls to soak up the gravy, along with coleslaw or roasted carrots for extra color and texture.

Directions

1. Preheat the oven
Set your oven to 375°F (190°C) and lightly grease a 9×13-inch glass baking dish.

2. Season the chicken
Pat the chicken thighs dry with paper towels. Lightly rub them with oil and season with salt, pepper, and paprika if desired. Place them in the baking dish with the skin facing up.

3. Mix the sauce
In a bowl, whisk together the cream of chicken soup, milk, onion powder, garlic powder, ½ teaspoon salt, and ½ teaspoon pepper until the mixture is smooth.

4. Pour over the chicken
Spread the sauce evenly over the chicken so each piece is covered and the spaces between them are filled.

5. Bake covered
Cover the dish tightly with foil and bake for 30 minutes.

6. Continue baking uncovered
Remove the foil and bake for another 20–30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the sauce becomes thick and bubbly.

7. Optional broiling step
If you want a lightly golden finish, place the dish under the broiler for 2–3 minutes, watching closely to prevent burning.

8. Rest and serve
Let the dish rest for 5–10 minutes before serving. Taste the sauce and adjust the seasoning if needed. Garnish with chopped parsley and serve hot, spooning the creamy sauce generously over each portion.
