  • 1 lb ground Italian sausage
  • 1 cup yellow onion, finely diced

  • ½ tsp black pepper
  • 1 lb baby red potatoes, thinly sliced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) kidney beans, drained and rinsed
  • 1½ cups frozen corn
  • 1 can (14.5 oz) fire-roasted tomatoes, undrained
  • 2 tsp minced garlic
  • ½ tsp chili powder
  • 1 cup shredded Colby-Jack cheese
  • Fresh cilantro, for garnish
