Christmas Morning Fix” — just 4 ingredients, and I prep it every Christmas Eve

This simple breakfast casserole works just as well for busy weekday mornings as it does for laid-back holiday brunches. Made with hearty breakfast sausage and crispy shredded hash browns, it’s a warm, satisfying dish that comes together with very little effort.
Country Breakfast Casserole
Ingredients:
- 1 pound breakfast sausage (pork, mild or hot)
- 6 large eggs
- 2 cups milk (whole or 2%)
- 5 cups frozen shredded hash brown potatoes
Instructions:
Step 1: Preheat and Prepare
Heat the oven to 350°F (175°C). Grease a 9×13-inch baking dish using butter or nonstick spray.
Step 2: Brown the Sausage
Cook the sausage in a large skillet over medium heat, breaking it into crumbles as it cooks. Once browned and fully cooked, drain any excess fat.
Step 3: Layer the Casserole
Spread the frozen hash browns evenly across the bottom of the prepared baking dish, pressing them down lightly. Scatter the cooked sausage over the potatoes.
Step 4: Whisk the Egg Mixture
In a bowl, beat the eggs with the milk until well combined and slightly frothy. Add salt and pepper if desired.
Step 5: Assemble
Pour the egg mixture evenly over the sausage and hash browns, gently tilting the dish to help the liquid spread throughout.
Step 6: Bake
Place the dish in the oven and bake uncovered for 40–45 minutes, until the casserole is set in the center and lightly golden around the edges. A knife inserted in the middle should come out clean.
Step 7: Rest and Serve
Let the casserole rest for 5–10 minutes before slicing to allow it to firm up for easier serving.
