Loaded Baked Potato & Chicken Casserole – The Ultimate Comfort Dish

This hearty casserole brings together juicy chicken, seasoned roasted potatoes, gooey melted cheese, crispy bacon, and bright green onions. It’s an easy, satisfying dinner that delivers classic comfort in every bite.


Ingredients

Casserole Base & Seasoning

  • Chicken breast – 1 kg
  • Potatoes – 8
  • Olive oil – ⅓ cup
  • Salt – 1½ tsp
  • Freshly ground black pepper – 1 tbsp
  • Paprika – 1 tbsp
  • Garlic powder – 2 tbsp
  • Hot sauce – 6 tbsp

Toppings

  • Grated cheese – 2 cups
  • Crumbled bacon – 1 cup
  • Diced green onion – 1 cup

Instructions

1. Preheat the Oven:
Set your oven to 500°F (260°C) to ensure a hot, crisp finish.

2. Make the Sauce:
In a large mixing bowl, whisk together the olive oil, salt, pepper, paprika, garlic powder, and hot sauce.

3. Prep & Bake the Potatoes:
Cut the potatoes into cubes and toss them in the sauce, ensuring they’re evenly coated. Leave any extra sauce in the bowl for later. Coat a 9×13-inch baking dish with cooking spray, spread the potatoes inside, and bake for about 45 minutes, stirring every 15 minutes.

4. Prepare Chicken & Toppings:
Dice the chicken and mix it with the leftover sauce to marinate. In a separate bowl, combine the cheese, bacon, and green onions.

5. Assemble the Casserole:
After the potatoes finish cooking, add the marinated chicken to the dish and stir to combine. Sprinkle the cheese–bacon–green onion mixture evenly over the top.

6. Finish Baking:
Return the casserole to the oven for 15 minutes, or until the chicken reaches 165°F (74°C) and the cheese is fully melted and bubbling.
